Herb & Cheese Scones
i was in the mood for something different, aside from all the cakes, cookies & desserts so i decided to make this instead. during my 1st attempt at scones (which i did not post it), i cut them out too thinly, thinking that they might rise alot during baking that i ended up with scones that looked like crackers instead. so this time, i cut out thick slices and i finally had some decent looking scones. texture wise, quite ok but abit dry. a little like english muffins and pretty similar to the
bacon cheddar & chive muffins i did sometime back in august, only better since these are bite-sized and hv a pretty shape. the added dried rosemary & oregano are fantastic too. do give it a try if you want something different for your lunchbox or simply to munch on.

ingredients:
250g plain flour
1 tsp baking powder
80g butter, softened
100g shredded cheddar cheese
150ml milk
1 tsp dried rosemary
1 tsp dried thyme
1 tsp dried oregano
directions :
sift together flour & baking powder. rub in butter until mixture resembles fine bread crumbs.
make a well in the centre and add in milk to form a dough.
stir in cheese & herbs and mix well until combined.
cut out dough using a heart-shaped cookie cutter, about 1 cm thick and place 2 inches apart on a greased baking tray.
bake in a preheated oven of 190 deg for 15-20 mins until insides are cooked and surface is golden brown.
serve dipped in olive oil or butter.
