Easy Shepherd's Pie
there are many days when i lunch alone and all i want is something easy, fuss free (yet delicious). i've been dreaming of a shepherd's pie ever since i had it at muddy murphy's irish pub a long time ago but yet i've never really gotten around it. if there's an award for the biggest procrastinator in the world, guess it would have 2b me. i just hv the habit of putting off things to the very last minute, or when i feel like it. not sure if i ever mentioned that i can leave cream cheese or butter out at room temp coz i feel like baking something but put it back in the end coz i just didn't feel like baking anymore LOL.

anyway, back to the shepherd's pie, i cheated using instant potatoes. the powdered kind where you just add hot water (and butter) if u like. i don't hv a recipe coz everything's based on estimation after surfing a few online recipes & blogs. basically its like this. i started off by chopping 1 onion, carrot & boiling some frozen green peas. i then fry everything together for a few mins, add in the minced beef, some worcesterchire sauce, tomato paste & beef broth. seasoning used was sea salt, freshly cracked black pepper & thyme. afterwards i spooned the mixture in a baking dish, added the mashed potatoes on top and then sprinkled it with mozzarella cheese. sent it to the oven to bake at 200C for about 15-20 mins. end result? totally delicious!! in fact it caught me by suprise at how good it was, no kidding! i'm not sure if it'll be better to boil yr own potatoes but its too much of a hassle for me :p i wanna try making gnocchi next!
