i took the recipe from my trusty donna hay's modern classics 2 which uses ready-made sponge fingers, requires no raw eggs nor syrup, and most importantly, the end result was satisfactory :p this is very easy to put together, and the sweetness is just right. and finally, i was able to taste the kahlua in there. i used movenpick's italian espresso this time, and i think using good quality coffee is really important. instant coffee simply pales in comparison.



ingredients:

(serves 4)

1/2 cup strong espresso coffee (i used movenpick's italian espresso)

1/2 cup coffee liqueur eg. kahlua or tia maria

16 sponge fingers, halved lengthwise

cocoa powder for dusting

(filling)

1 1/4 cup (310g) mascarpone cheese

1 1/2 cup single cream

3 tbsp icing sugar, sifted


directions :

1. to make filling, place the mascarpone cheese, cream & icing sugar together and whisk until light & creamy.

2. place the coffee & liqueur in a bowl and stir to combine. quickly dip both sides of the sponge finger halves in the coffee mixture and place them in 4 glasses.

3. top with half the filling. dip the remaining sponge fingers and place on top of the cream layer. spoon over remaining filling and dust heavily with cocoa powder before serving. refrigerate until required.
