Macha Eclairs

its actually an impromptu decision to make this - after seeing the recipe by fauchon in dorie greenspan's paris sweets. macha eclairs paired with green tea whipped cream and a macha fondant glaze. the original recipe is for coffee eclairs but i made a macha (green tea) version instead. i've tried making eclairs before, so this time what i really wanna experience is the fondant glaze. turned out quite good. though the fondant is really sweet, its not so when you pair everything together since the choux pastry itself has zero sweetness and the whipped cream is only slightly sweet =)

this is really easy to put together. for the choux pastry, you can follow the recipe for my chocolate eclairs and if you wanna pair it with macha creme patisserie (pastry cream), the recipe for the it is here. all u hv to do is add abt 1-2 tsp of macha powder to the milk, and the instructions for the rest of the recipe is the same. for the fondant glaze, its simple too! just add icing sugar to a few tbsps of water, keep mixing (and adding) icing sugar + a dash of lemon juice until u get a thick spreading consistency. like macarons, im gonna experiment them with different flavors - raspberry, caramel, coffee, chocolate. this is the time where i exercise my imagination!
