
made this today and i'm really happy with the results. actually this is my 2nd attempt coz the first one wasnt successful. i wouldnt actually call this a cheesecake coz it resembles more like the hershey's sundae pie. this is a rather satisfying dessert, when you don't crave for ice cream or cake. the biscuit base makes a great complement to the soft cheese and if you're on a budget, get the danish cream cheese from phoon huat ($2.50 for 250g). the one i bought was rather expensive since i made it with kraft's philedelphia cream cheese ($4.65 for 250g). thx to florence again who provided the recipe. by the way, you need a springform cake tin to make this. for those of you who doesnt know what a springform tin is, its actually one that has got a metal buckle on the tin and the base comes off separately when the buckle is unfastened. cheesecakes cannot be turned over so a springform tin is needed.
(makes one 18cm cake)
ingredients (base) :
110g digestive biscuits, chopped into fine crumbs
40g melted butter
(filling) :
250g cream cheese, room temperature
45ml milk
50g icing sugar
1 tbsp vanilla essence or rum
8 oreo cookies (coarsly chopped)
4 oreo cookies (finely chopped)
250ml whipping cream
1tbsp gelatine powder
10ml lemon juice
3 tbsp boiling water
method :
1. mix biscuit crumbs & melted butter together and press firmly onto the base of cake tin. chill for 30 minutes.
2. beat whipping cream with electric beaters until 70% stiff or until mousse-like.
3. double-boil gelatine, lemon juice & boiling water until totally dissolved. keep warm. (to double-boil, heat a pot filled with water and place another bowl inside the pot & gelatine, lemon juice & boiling water into the bowl).
4. beat cream cheese, icing sugar, milk and vanilla essence until smooth & creamy. blend in gelatine solution.
5. blend in whipping cream.
6. pour 1/2 the cheese mixture onto the base. chill for another 15 minutes.
7. stir in finely chopped cookies into the other 1/2 of the mixture. mix well.
8. sprinkle coarsely chopped cookies on top of the first half of cheese mixture.
9. pour in the other half of the cheese mixture.
10. chill for 3 to 4 hours before serving. decorate as desired.
tip : to chop the biscuits into crumbs, i put them into a ziploc bag and then chop with the back of a knife. simple and fuss free =). phoon huat also sells artificial liquor flavors such as rum, grand marnier, kirsch and brandy. not sure how they taste like, or if its really identical to the real thing. but if liquor isnt available at home or its too expensive, then i guess the artificial one would be the best bet.

Hey just a question, do you know how long this cake can last in the fridge? If I make it on wednesday will it still be good on saturday youthink? :)
